Watermelon and mint spritz

There are so many Egyptian foods I crave throughout the year but as soon as summer hits I know watermelon and mangoes are where it’s at! Egyptian fruit has always been next level and you can’t beat a plate full of ice cold watermelon chunks. 🍉 I found some giant tasty watermelon slices sold in west London (turns out they’re imported from Greece!) so I turned some of it into juice because nothing says summer like watermelon spritz.

Recipe

Watermelon and mint spritz

For 2 you’ll need:

  • 400g watermelon chunks, pips removed

  • 1/4 cup granulated white sugar

  • Juice and zest of 1 lime

  • Sparkling water

  • Ice

  • Fresh mint leaves for garnish

Directions

  1. Blend the watermelon in a blender or a NutriBullet until smooth, sieve then pour back in the blender. Add sugar, lime juice and zest then blend again. Fill 2 tall glasses with ice, pour half of the mix in each then top up with sparkling water.

  2. Garnish with mint leaves, give it a quick stir and enjoy!


'Bel hana' is a shorter version of 'bel hana wel shefa' which roughly translates to 'with happiness and good health' and the Egyptian way of saying Bon Appetit.
