Qatayef (mini stuffed pancakes)

These mini stuffed fried pancakes are so good. They’re most popular around Ramadan where you’ll vendors right and left either selling batches of plain qatayef for you to make yourself or ready-made full of nuts, coconuts and drenched in delicious sugary syrup.

Now you can make your own any time of the year and fill them with whatever you like! What stuffing would you use? Leave me a comment below!


Recipe

Qatayef (mini stuffed pancakes)

For the batter:

  • 400ml room temp water

  • 1 teaspoon yeast

  • 1 cup plain flour

  • 2 tbsp semolina

  • 2 tbsp powdered milk

  • 1 tbsp brown sugar

  • Oil for frying

For the filling:

  • 1/4 cup sultanas

  • 1/2 cup desiccated coconut

  • Roughly chopped walnuts

  • 1 tsp sugar

Directions

  1. Start by mixing the water, yeast and sugar together until dissolved. Sieve the dry ingredients in a separate bowl. Whisk until everything is combined, cover in cling film and leave for an hour.

  2. When the batter is ready, heat a medium nonstick pan and add a small ladle of the mixture. Try and make 2 or 3 at once. When bubbles start to form, remove (don’t flip), add to a large plate and cover with a tea towel. Avoid stacking the pancakes on top of each other but instead lay them out so they don’t stick.

  3. Mix the filling together and assemble like this 👆🏽Cooking the pancake on just one side makes it easy to pinch and close.

  4. You can tuck in like this or fry them for 2-3 minutes and drizzle some honey or sugar syrup while they're still piping hot and sprinkle some ground pistachios. Bel hana!
